Savor Sells Hundreds of Products Made With Animal- and Plant-Free Butter​ at San Francisco Launch Event

The week before last, food tech startup Savor held a launch event in San Francisco for what it claims are the world’s first commercially available ​handcrafted confections​ made with carbon-based, animal- and plant-free butter​.

The products were developed in collaboration with Savor’s award-winning patisserie partner, ONE65. Hundreds of people RSVP’d for the event, with lines forming outside the patisserie by 3:30 p.m.

The supply of bonbon and cookie samples was reportedly exhausted within the first hour, and ONE65 says it subsequently sold hundreds of bonbons within hours of putting them on display.

Three flavors can now be purchased at the patisserie — Butter Ganache Dark Chocolate, Earl Grey Milk Chocolate, and Raspberry Dark Chocolate (all vegan-friendly). P​resales have also begun for nationwide distribution ​v​ia Savor’s website.

Bypassing conventional agriculture

Savor’s butter is made using a proprietary process that converts captured carbon dioxide, green hydrogen, and methane into structured fats, using no animal or plant inputs. The product has received self-affirmed GRAS (Generally Recognized As Safe) status from the USDA, meaning it can be commercially distributed in the US.

“This direct carbon-to-fat conversion bypasses the lengthy, resource-intensive agricultural cycle entirely, drastically reducing the land, water and agricultural inputs required to make conventional fats,” Pierre Coeurdeuil, Senior Manager of Strategic Partnerships at Savor, told Cultivated X in a recent interview. “Our technology’s versatility enables infinite customization of fatty acid profiles, allowing us to create everything from incredibly dairy-like butter to sustainable palm oil alternatives.”
