Merck and mantro Launch Spinoff Producing Edible Membranes for Cultivated Meat and Alt Protein Production

Science and technology company Merck has partnered with company builder mantro GmbH to launch EdiMembre, a deep-tech spinout that will commercialize Merck’s edible membrane technology for alternative proteins.

The new company will expand the applications of the edible membrane platform, which enables the creation of complex tissue structures for scalable cultivated meat production and has also been used to explore high-protein plant-based pasta applications.

Merck will not only contribute its intellectual property and expertise, but also provide cell culture media and help to co-create new opportunities in structured meat production.

“The formation of EdiMembre represents a significant milestone in the alternative protein industry,” said Manfred Tropper, CEO of mantro and new non-executive board member at EdiMembre. “By combining Merck’s cutting-edge technology with mantro’s company-building expertise and strong investor backing, we have created a powerhouse capable of driving real change in sustainable food production. I am thrilled to be part of this journey and confident in our ability to make a lasting impact.”

“Powerful solution”

EdiMembre is headquartered in Massachusetts and led by former Merck employees. The founding team includes Chief Executive Officer Timothy Ryan Olsen and Chief Technology Officer Ryan Sylvia, who previously led the Cultured Meat and Scaffold Technology programs at Merck, respectively.

EdiMembre has already developed countertop edible hollow fiber bioreactors for the production of whole-cut cultivated meat and pasta made from legume protein isolate. Both applications have reportedly been validated by industry partners.

Additionally, the company has secured a pre-seed investment of $400,000 from investors including Siddhi Capital, Replicator VC, Meach Cove Capital, and Cellular Agriculture, Ltd., a portfolio company of Hilton Foods.

“Cultivated meat, a core focus in the alternative protein market, offers a powerful solution for sustainability and global food security,” said Laura Matz, Group Science & Technology Officer at Merck. “To meet urgent market needs, the development of structured meat products that replicate the texture and complexity of conventional meat is essential. Leveraging its pioneering technology and patent portfolio, Merck enabled the creation of a dedicated spin-out to develop a market-ready product, unlocking access to this breakthrough and empowering clients and investors to shape the future of food together.”
