PARIMA: New Cultivated Food Giant Created from Gourmey-Vital Meat Acquisition

Gourmey, a French company specializing in cultivated food technology, has completed the acquisition of Vital Meat, forming a new entity named PARIMA. The newly formed company will focus on the production of next-generation animal products through scalable, cell-based cultivation techniques. This merger brings together two leaders in the cultivated protein sector, combining expertise in cell cultivation and industrial production.

“We’ve proven economic viability and are now expanding across species”

PARIMA’s portfolio includes a range of animal species, with current offerings in cultivated duck and chicken. The company plans to expand its reach across multiple market segments, from premium dining experiences to large-scale applications.

“The time is right to unite. We’ve proven economic viability and are now expanding across species. By uniting two pioneering teams, we’re strengthening Europe’s ability to lead the global shift toward efficient and sustainable animal production through innovation, complementing existing methods and building more resilient value chains,” stated Nicolas Morin-Forest, CEO of PARIMA.

Gourmey’s existing platform, which has already achieved success with cultivated duck products validated by Michelin-starred chefs, is now complemented by Vital Meat’s poultry cell-line technology. Vital Meat’s expertise is rooted in nearly 25 years of research at Groupe Grimaud, a recognized leader in animal genetics and biotechnology.

Regulatory filings across key regions

In addition to its product offerings, PARIMA has developed a strong regulatory presence, with nine active regulatory filings across key global regions. This includes Gourmey’s early leadership as the first company to seek approval for cultivated products under the European Commission’s novel food framework. The company is on track to secure approval for cultivated chicken and duck, which would make it the first to receive approval for two animal species in this emerging sector.

“Joining forces enables us to reach the critical mass needed to serve global, multi-channel markets, from premium foodservice to large-scale B2B ingredients,” said Etienne Duthoit, Founder of Vital Meat.

PARIMA’s intellectual property portfolio is also a significant asset, comprising over 15 patent families and more than 70 patent applications. This broad IP base positions the company well for future innovation and growth in cultivated food production.

The integration of Vital Meat’s technology into PARIMA will further enhance the company’s capacity to scale production efficiently, with a bioreactor capacity of 2,000 liters at its Nantes facility and advanced poultry cell lines.

Bringing together technical and economic strengths

PARIMA will continue to focus on commercializing its cultivated food products globally while Gourmey maintains its role as the company’s culinary and innovation arm, working with top chefs and fine food distributors. This partnership is expected to help the company strengthen its market position and expand its offerings across multiple species and applications.

Frédéric Grimaud, CEO of Groupe Grimaud, commented, “Vital Meat’s technology, built on our decades of expertise in animal genetics and bioproduction, is strengthened through its integration into PARIMA. This partnership brings together the technical depth and production economics to make cultivated poultry commercially viable.”
